Cabbage and Chicken (or Shrimp) Salad

1 cup   chicken shredded (or prawns fried)
1 pc     medium head cabbage finely chopped
2 tbsp mint leave chopped
2 tbsp polyground leaves
1 tbsp sugar
2 tbsp lime juice, cracked black pepper
2 tbsp sliced & fried shallots
2 tbsp peanuts, chopped
1 cup   coriander leaves

Green Papaya Salad

50 gr    dried shrimps
100 gr green beans, cut in sticks
1 ea     berg lettuce
1 pc     medium green papaya
1 pc     lime juice
2 tbsp fish sauce
2 tsp    chopped red chilli
½ cup   unsalted roasted peanuts, chopped
1 red chilli, extra finely chopped

Beef and Green mango Salad & Pomelo Salad

1 pc     steak cooked RARE
1 pc     green mango finely sliced
1 tbsp polygenum leaves (or Vietnamese mint)
1 cup   fish sauce
1 pc     small red chilli, chopped
2 tbsp fried shallots
2 tbsp chives
