MAPLE SYRUP COOKIES




Preparation time: 15 min
Cooking time: 12 to 15 min
Makes: About 12 to 14

INGREDIENTS
120 g/ 4 oz lightly salted butter
120g/ 4 oz light brown sugar
1 egg, beaten
175 g / 6 oz plain flour
2 Tbsp maple syrup

Pre-heat oven to 350 F/ 175 C/ Gas mark 4. Grease two large baking sheets or line with non-stick baking parchment.
q  Beat the butter and sugar together in a mixing bowl. Beat in the egg, then add the flour and maple syrup.
q  Place 12 to 14 equal – sized spoonfuls of the mixture onto the baking sheets, allowing 8 cm/ 3 in for spreading. Flatten the mounds of mixture a little with the back of the spoon. Bake in the oven for about 12 to 15 minutes, until pale golden. Remove from the oven and allow to cool for one minute to allow the cookies to firm, before removing with a thin metal spatula to a wire rack to cool completely. Store in an airtight container.
