Sichuan Chilli Shrimps
山城辣子虾
Ingredients: 备料
500 gr. Un-peeled shrimps 基围虾
Dried chilli 干辣椒
Sichuan pepper 花椒
Shallot, chopped 葱末
Ginger, chopped 姜末
Garlic, chopped 蒜茸
Salt 盐
Chilli oil 辣椒油
Method: 制做方法

基围虾剪掉虾须, 从背开刀
Cut the shell in half and take out the tube. cut
off the palpus,

放入容器中加鸡粉, 盐, 花雕酒, 姜葱, 水腌制. 然后拌入干五香粉, 入热油, 锅炸至金黄酥脆, 捞出
put it in container, add chicken powder, salt, Huadiao
wine, ginger, shallot and little water for marination . Then add five-spicy
powder. Fry in hot oil till golden, drain the oil & put on the side.

用锅放入油煸炒辣椒, 花椒, 加热料酒, 葱姜蒜及少量盐.倒入炸好的虾反炒, 淋入辣椒油即可.
Heat the oil in the wok, add chlli, Sichuan
pepper, cooking wine, chopped ginger, chopped spring onion, a little salt, then
add shrimps and stir-fry. Sprinkle little chilli oil, immediately service.
特点: 香辣, 酥脆, 一道非常受欢迎的酒菜.
Characteristic: Nice strong smelling dish of chilli & Sichuan pepper.
Very crispy and it is a good dish with
wine.
