SICHUAN CHILLI S H R I M P



Sichuan Chilli Shrimps

山城辣子虾

Ingredients: 备料

500 gr. Un-peeled shrimps                       基围虾

            Dried chilli                                   干辣椒
            Sichuan pepper                            花椒
            Shallot, chopped                          葱末
            Ginger, chopped                          姜末
            Garlic, chopped                           蒜茸

            Salt                                               
            Chilli oil                                       辣椒油

Method: 制做方法

Ø  基围虾剪掉虾须, 从背开刀
Cut the shell in half and take out the tube. cut off the palpus,  

Ø  放入容器中加鸡粉, , 花雕酒, 姜葱, 水腌制. 然后拌入干五香粉, 入热油, 锅炸至金黄酥脆, 捞出
put it in container, add chicken powder, salt, Huadiao wine, ginger, shallot and little water for marination . Then add five-spicy powder. Fry in hot oil till golden, drain the oil & put on the side.

Ø  用锅放入油煸炒辣椒, 花椒, 加热料酒, 葱姜蒜及少量盐.倒入炸好的虾反炒, 淋入辣椒油即可.
Heat the oil in the wok, add chlli, Sichuan pepper, cooking wine, chopped ginger, chopped spring onion, a little salt, then add shrimps and stir-fry. Sprinkle little chilli oil, immediately service.

特点: 香辣, 酥脆, 一道非常受欢迎的酒菜.
Characteristic: Nice strong smelling dish of chilli & Sichuan pepper.  Very crispy and it is a good dish with wine.
