Avocado, Asparagus and Sun-Dried Tomato Salad with Goats Cheese

Ingredients: Yield: 10 Portions

150 g. Avocado
150 g. Asparagus
100 g. Home made sun-dried tomatoes
100 g. Goats Cheese
500 g. Salad Mix
50 g. Herbs
Pepper and salt
3 dl. Basic dressing

Method:

Cut the asparagus, avocado and sun-dried tomatoes in sticks and mix with the basic dressing, the salad leaves, pepper and salt, toss and place in a salad bowl. Sprinkle with goat cheese crumbles and garnish with fresh herbs.

Home made sun-dried tomatoes: peel and seed the tomatoes, cut in four, sprinkle with salt, and season with thyme, rosemary, sugar, garlic. Dry in the oven for one day and store in the fridge in olive oil.
